I found yur blog from Zoe Bakes. This recipe looks wicked good! I haven’t tried the large batch brioche but have made a fairly sweet dough from KAF for their pecan sticky buns (with an overnight starter.) We love almond paste and will definitely make this soon. Thanks from California

Hi Lindsay – You aren’t slicing all the way through, but you still twist each cut piece so the filling is facing up (there is a picture above the recipe with the pre-baked ring that shows they pieces twisted). It just makes the ring look a bit prettier. 🙂

Question – what do you mean when you say, “twist each piece cut side up?” We’re not slicing all the way through the log, are we?
